  • 1 medium to large carrot
  • 1 medium to large potato
  • ½ cup green peas
  • ¼ cup French beans (chopped)
  • ¾ to 1 cup eggless mayonnaise
  • 1 small stick of celery (finely chopped)
  • Salt (to taste)
  • Black pepper powder (optional)

For Garnish:

  • Lettuce leaves (as required)
  • Slices of tomato, cucumber, or capsicum (bell pepper)

Instructions

  1. Cook the Vegetables: Begin by boiling the carrot, potato, green peas, and French beans in a pot. Ensure there’s enough water to just cover the vegetables. You can also use a stovetop pressure cooker or an Instant Pot to soften the veggies.
  2. Cool and Chop: Once the vegetables are cooked through, drain the water and allow them to cool slightly. Then, peel the potato and carrot, and chop all the vegetables into small pieces. Alternatively, some might choose to chop the veggies first and then boil them. However, boiling them whole is advisable as it helps retain water-soluble vitamins and minerals that might otherwise be lost.
  3. Prepare the Celery: Finely chop the celery and set it aside for later use.
  4. Mix Ingredients: In a large mixing bowl, combine the chopped vegetables and celery with the eggless mayonnaise. Add salt and black pepper to taste. Stir everything gently until well mixed.
  5. Garnish and Serve: To serve, place the Russian salad on a plate lined with fresh lettuce leaves. You can garnish it with slices of tomato, cucumber, or capsicum for added color and flavor.
